Gluten Free Pancakes

Ingredients:

½ cup gluten free flour mix

1½ cups filter water

pinch of salt

4 eggs

Method:

Mix all the ingredients together and pour ½ cup portions at a time onto a heated non stick frying pan with a little unscented coconut oil.  When it is cooked through and lifts on its own turn it over and let it cook on the other side.  Take off and sprinkle with cinnamon and sugar or make a chicken and mayo wrap like we sometimes do.
